Ingredients (serves 4)

Method

  1. Bring a large pan of salted water to a rapid boil and cook the pasta according to the instructions on the packet.
  2. When cooked, place the pan into the sink under cold running water for about 3 -5 minutes to cool the pasta down and stop it from cooking any more.
  3. Drain and set aside
  4. While the pasta is cooking cut the salmon into strips and then into about 1cm cubes, place into a bowl along with the olive oil and smoked paprika,
  5. Mix well and leave for about 10 minutes to marinade.
  6. De-seed and finely slice the peppers, peel and finely slice the red onion and place both into a clean bowl along with the pasta.
  7. Heat a frying pan and add all the salmon and olive oil mixture, cook for about 3 minutes on a high heat,
  8. Pour all of the salmon and oil into the pasta.
  9. Add the lemon zest and juice and the dill,
  10. Mix well and season to taste.
