Ingredients (serves 4)
- 300g penne pasta
- 170g fillet of salmon
- 1 red pepper
- 1 yellow pepper
- 1 red onion
- 3 tbls of olive oil
- 1 tsp of smoked paprika
- Juice and zest from 1 lemon
- 2 tbls of chopped fresh dill
- Salt and pepper
Method
- Bring a large pan of salted water to a rapid boil and cook the pasta according to the instructions on the packet.
- When cooked, place the pan into the sink under cold running water for about 3 -5 minutes to cool the pasta down and stop it from cooking any more.
- Drain and set aside
- While the pasta is cooking cut the salmon into strips and then into about 1cm cubes, place into a bowl along with the olive oil and smoked paprika,
- Mix well and leave for about 10 minutes to marinade.
- De-seed and finely slice the peppers, peel and finely slice the red onion and place both into a clean bowl along with the pasta.
- Heat a frying pan and add all the salmon and olive oil mixture, cook for about 3 minutes on a high heat,
- Pour all of the salmon and oil into the pasta.
- Add the lemon zest and juice and the dill,
- Mix well and season to taste.
